
Whether it's accidental or not, this book has some yummy looking food. Everything is covered, from appetizers, sauces, dressings, soups, mains, sides and desserts. As I flipped through the recipes, I noted that there aren't long lists of ingredients or esoteric ones, either. Most ingredients are fresh fruits and veggies, cans of beans or tomatos, and lots of international flavors - changed a bit to add more veggie color.
While Gartenstein isn't vegan, she runs a vegetarian cafe and is a proponent of eating local vegetables, and lots of them. Evidence of that is in these recipes. Some to tickle your fancy: Tamales with spinach & pumpkin seed, or with bean & chipotle. Korean barbecue seitan, mushroom polenta casserole, curried chickpea salad, fennel tapenade.....
